After several years of salaried employment, two bakers in their thirties wanted to set up their first business in the Paris region. We created for them a bakery, a pastry laboratory, a shop and accommodation in the premises of a former fitness centre. The main challenge was to include a complete set of equipment and yet respect a tight budget.
